This recipe got me thru 2020: Orange Zucchini Bread with Apricot. The orange zest with apricot bits turned out to be a sweet surprise. Dried apricots are my go to snack normally so I stocked up during Covid and thought I would try them in a quick bread loaf. Turns out the loaf was moist and satisfying with the fruits and zucchini.  I reduced both sugar and oil by adding the apple, something you could try in your own loaf recipes. The loaf lasts very well wrapped in a large beeswax wrap. Try a beeswax bag to wrap it up for a lunch snack. This loaf is so moist there is no need for butter!
